A lot of my friends don’t believe me when I say that I always make my bed every morning. Granted there’s no flowers on the bed to greet me everyday when I come home after a long day, but my bed is always done. There are a few instances when I rush to go to work leaving my bed unkempt, but the thought of it irks me! There’s just something about coming home to a messy bed that irritates the living crap out of me. Call me OCD, but that’s just how I was raised. Growing up, my grandpa often got mad at me when I didn’t make the bed. Now, it’s just a habit.

I wasn’t too sure what I was going to photograph this weekend since I’ve been uninspired lately. I sat on my dining room floor playing a game when my roommate handed me a plate of springrolls. Instinctively, I grabbed my camera to take photos of the beautifully plated food on a bed of lettuce. At first, I was going to Snapchat the entry and move on. But then the artsy fartsy in me began to kick in! 

 He also asked if I was interested in potstickers to enhance the composition of the photo, and I just couldn’t deny the suggestion. It’s interesting how my blog posts turn out because they’re usually not planned. They really just happen out of whim. Luckily, they all happen to be before Sunday! There’s never a weekend where I run out of ideas for this blog. Somehow, inspiration tends to come my way despite my last minute pursuits. Truly, my muse is watching over me! And thank heavens for roommates that saves the day on blog posts!

Butter Cookies Recipe

Any of you tried the butter cookies at Trader Joe’s? They’re actually a hot buy there which got me wondering if there was a mock-up recipe for them. Lo and behold, there is a recipe!

You’ll need:

8 ounces of cookies sealed in a sturdy zip-top bag

1/2 cup vegetable oil

1/4 cup of water

1/2 cup powdered (confectioner’s) sugar

A note on the measurements: Cookies weigh different amounts because they vary widely in density. If you can’t measure/approximate 8 ounces based on what is listed on the packaging, you can try to wing it by starting with 1/3 of the pack of cookies and adjust the other ingredients as you go, but it’s best to do this with the correct measurements to ensure the right consistency and balance of flavor.

Steps:
1. Crush the cookies into coarse granules (it’s okay if there are some larger pieces), then transfer to a food processor (or blender) and pulse until you have a fine powder. (Crushing them beforehand makes the blending easier.)
2. Slowly drizzle in the vegetable oil, then add the water and blend until a paste forms. Add the powdered sugar gradually (by the tablespoon, if you like), scraping down the sides of the blender every so often to make sure it all incorporates. Add more water as necessary until desired consistency is reached — you want it to be spreadable.
3. Transfer to a jar with a tight-fitting lid and refrigerate for 30 minutes before serving. (Cookie butter will keep, refrigerated, for up to a week.) 
Go ahead and enjoy it on pancakes, waffles, ice cream, crackers, celery or (practically) anything else!

I have a thing for adorable things like cute little cupcakes, Disney, and Funko Pops. There was a time in which I questioned whether my friends think I’m a kid at heart or just plain Asian. It was confirmed by many that I’m a kid at heart. Maybe there’s just a part of me that’s afraid of completely growing up, but I’m in love with everything CUTE! I wanted to extend that interest via these photos. 

By the way, did I mention that I snagged that cake stand for only $5? I got it at Target from one of their season/discounted sections by the store front. I always have to stop by that section before I walk around the store. I’ve been meaning to add a cake stand in my collection of decors which actually makes no sense because I hardly like cake. I know, I’m a walking contradiction.
