I’ve been sitting here staring at these photos thinking about what to say when it dawned on me that time is precious, but… Is it just me or is there something about the future that’s a bit scary? Something about the unknown is both beautiful and haunting. Don’t you think so?

Nevertheless, check these guys out for their beautiful and very affordable collection of watches. I’ve been using them myself and I just adore their fit and style. It’s amazing how such pretty watches can be priced this low for such great quality. I’m still baffled myself.

What They Think of Me

A month ago, I was wondering what type of a person my friends like I am. Seeing what type of gifts I received for my birthday this year, I can’t tell whether they think I’m a child at heart or just overly Asian. Either way, this month has been amazing so far filled with laugh, love, food and photos.

Empanadas and Everything Else

I made these about two weeks ago thinking that it was going to be super quick to make, but it literally took me half a day! By the time I was finished, I was pooped and had no energy to eat them. So I had them sitting on the counter for everyone else to munch on. I do have to say that once I found the energy to take a bite of one, they were so delicious! I want to perfect these a little bit more before I share you guys the recipe, but for now, feel free to gawk at these empanadas, because I sure am now! 

I hope you all have a lovely weekend filled with lots of love and adventures! This weekend, I’ll be going to Zion National Park in Utah. It’s gonna be such an amazing experience, and I can’t wait to tell you all about it soon!

Baked Salmon with Zucchini Medley

 I’m currently sitting in my kitchen staring at the whirlwind of mess that I caused today. I don’t know what got to me. I was on my couch for a good hour trying to motivate myself to do something productive, and this happened. Aside from the pictures, I made this baked salmon with zucchini medley. I wanted to share with you how I made the salmon! 


Here is what you’ll need:
1 6 oz. salmon
1 tbs roasted garlic & herb  seasoning
1 tbs pepper
1 tsp cayenne pepper (or more if you like it spicy!)
1 tsp ground ginger
1 1/2 tbs mayonnaise
1 tbs olive oil
cheddar cheese (optional)

Direction: 
Preheat the oven at 450 degrees. Combine the roasted garlic & herb seasoning, pepper, cayenne pepper, ground ginger in one bowl, and slather it on the salmon. Drizzle the olive oil on top of it, and spread the mayo over! For more “bang” to this delicious recipe, add cheese on top of it. After doing that, place it in the oven and let it bake for about 15 minutes. This recipe is good for one serving only.

Coffee in Bed

I’m not much of a fan for Halloween, so I’m a little happy that it already passed because that just means that my birthday, Thanksgiving and Christmas is coming soon. That morning, I stayed in bed ensconced with music, book, coffee and occasionally texting. I was also sick so I thought it was a good idea to just rest up.
